Chickadelic!

I haven’t forgotten y’all! I’ve got several blog posts percolating in my brain, but I’ve been too busy to pull pictures off my camera. I’ll just direct you to the yummy chicken stuff I made in my crock pot some days ago. We finished the leftovers for supper this evening! Here it be:

I’ve made it twice now, and it’s very yummy as a sort of soft tortilla filler with all the taco fixings, or without the tortillas as a taco salad topper. This last time I made it, I didn’t bother to look up the recipe and made it from memory:

  • 2 frozen chicken breasts (thank you, Sweden trips!)
  • some leftover diced onion
  • 2 jars of medium taco sauce (I think it was Old El Paso, bought in quantity on sale)
  • a little cumin
  • a little chili powder

Throw ’em in your crockpot on low for 6 hours. Pull apart the chicken with two forks towards the end of cooking time. Adjust seasonings when needed. (This gives you free rein to sample it! You’re welcome.) A tiny bit of prep in the morning, and you’ve got a delicious base around which to base your supper! Easy!
